Born of a Shelby Township pasticceria that had been kneading bread for a generation, Amore Torta is what happens when an Italian neighborhood bakery falls in love with Japanese cheesecake.

Every morning before the doors open, a soufflé is whisked by hand and lowered into a water bath. It rises slow. It comes out trembling. It's served in faintly sweet slices, between the cannoli and the calabrese, until the case is empty.
