Twelve eggs separated, whipped to glossy peaks, folded by hand into a warm cream-cheese custard. The cake rises in a water bath until it trembles. We sell it from 9 AM until it's gone.

We inherited a forty-year-old bread oven and a family of regulars. We added a daily Japanese cheesecake program because we couldn't stop thinking about it. Same room. New tenderness.
